Asparagus Bacon Rolls Recipe
- 1/4 lb beef eye of round, cut in 4-by-3 inch slices
- 6 slc smoked lean bacon
- 12 lrg asparagus spears, trimmed to 5 or possibly 6 inches long
- 1 ounce enoki mushrooms
- 1/2 x red bell pepper, julienned
- 1 Tbsp. oil
- 1/3 c. chicken broth
- 1/2 tsp cornstarch dissolved in 1 tsp. water
- 1 Tbsp. chopped garlic
- 2 Tbsp. dark soy sauce
- 2 tsp brown sugar
- 1 tsp sesame oil
- Combine beef with marinade.
- Allow to stand 5 - 10 min Wrap beef around asparagus spear, mushroom and bell pepper, then wrap bacon around the roll.
- Heat frying pan till warm over high heat, add in oil and asparagus rolls.
- Pan fry till brown about 2 to 3 min.
- Add in broth, cover, reduce heat to medium for 3 min.
- Add in cornstarch solution till sauce slightly thickens.
- Serves 4.
