Tinklee' s chocolate fudge
- 2 cup sugar
- 2/3 cup milk
- 2 tbsp corn syrup(light)
- 1/3 cup cocoa powder
- 1/4 tsp salt
- 2 tbsp unsalted butter
- 1 tsp vanilla
- butter loaf pan, 9-5-3(do not use butter in recipe for this)
- heat sugar, milk, cocoa, corn syrup and salt in 3 qt saucepan over med heat, stirring constantly, until sugar is dissolved.
- cook stirring occasionally, to 234* on candy thermometer or until soft ball stage(take a regular drinking cup fill half way with cold water pour a spoonful of candy into the water u should b able to form a softball that when u remove from the water will flatten)
- remove from heat add butter, do not stir
- cool without stirring to 120* ( bottom of pan will b lukewarm)
- add vanilla, beat continuously with wooden spoon until candy is thick and no longer glossy, about 5 min.
- spread in pan, cool until firm and cut into squares
