Aubergine And Oysters Recipe

  1. Preheat the oven to 350 degrees.
  2. Halve the aubergine lengthwise.
  3. Scoop out the flesh, leaving a shell 1/2" thick inside the skin.
  4. Chop the aubergine flesh.
  5. Cut the oysters into bite size pcs.
  6. Heat the butter in a skillet.
  7. Saute/fry the onion and garlic till transparent.
  8. Add in the oysters and aubergine pulp.
  9. Cook for 1 minute.
  10. Stir in the bread crumbs and the seasonings.
  11. Pile the aubergine mix into the aubergine shells.
  12. Arrange the stuffed aubergine shells on a well buttered baking sheet.
  13. Bake for 35 min.
  14. Serve warm.
