Aubergine And Oysters Recipe
- 1 med Aubergine
- 1 pt Oysters, Shucked
- 1/2 stk Butter
- 1/4 c. Onion, Chopped
- 1 x Clove Garlic, Chopped
- 1/2 c. Bread Crumbs, Italian Style Salt Pepper, Grnd Thyme
- Preheat the oven to 350 degrees.
- Halve the aubergine lengthwise.
- Scoop out the flesh, leaving a shell 1/2" thick inside the skin.
- Chop the aubergine flesh.
- Cut the oysters into bite size pcs.
- Heat the butter in a skillet.
- Saute/fry the onion and garlic till transparent.
- Add in the oysters and aubergine pulp.
- Cook for 1 minute.
- Stir in the bread crumbs and the seasonings.
- Pile the aubergine mix into the aubergine shells.
- Arrange the stuffed aubergine shells on a well buttered baking sheet.
- Bake for 35 min.
- Serve warm.
