Smart-Choice Fiesta Beefy Enchilada Casserole

  1. Heat oven to 350 degrees F.
  2. Brown meat in large skillet; drain.
  3. Stir in half the 2% Milk VELVEETA and 1/2 cup salsa; cook 5 min.
  4. or until VELVEETA is completely melted and mixture is well blended, stirring frequently.
  5. Stir in beans.
  6. Spoon 1/4 cup meat mixture down center of each tortilla; roll up.
  7. Place, seam sides down, in 13x9-inch baking dish sprayed with cooking spray.
  8. Bake 10 min.
  9. ; top with remaining VELVEETA and salsa.
  10. Bake 20 min.
  11. or until enchiladas are heated through and VELVEETA is melted.
  12. Top with sour cream and cilantro.
