Aunt Nellie'S Applesauce Cake
- 1 pt. watermelon preserves
- 1 pkg. citron fruits
- 1 bottle maraschino cherries
- 1/2 c. raisins
- 3/4 c. currants
- 1/2 c. water
- 3/4 c. sugar
- rind of 2 lemons
- 2 oranges
- 1 to 2 c. chopped walnuts
- 1 c. candied orange peel
- 1/4 c. more oil
- 2 eggs
- 2 c. brown sugar
- 1/2 c. butter
- 2/3 c. sour milk (or buttermilk)
- 1 tsp. soda, dissolved in milk
- 1 little brick chocolate
- 2/3 c. boiling water
- 3 c. flour
- 2 c. brown sugar
- 1/3 c. butter
- 2/3 c. cream or milk
- 1 brick chocolate, melted
- 1 c. sugar
- 1 c. flour
- 2 tsp. soda
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 1/3 c. melted butter
- 1 egg
- 1 c. ripe, mashed persimmons (about 2 1/2 persimmons)
- 1/2 tsp. vanilla
- 1/2 c. milk
- Use "dead ripe" persimmons and put through a strainer.
- Sift together all dry ingredients; stir in remaining ingredients. Place in dessert mold and cover with greased or waxed paper and then in kettle with sufficient water, cover tightly and steam for 1 to 3 hours.
- (Or place pudding in top pan of double boiler, cover with aluminum foil, then the lid and steam for 1 1/2 hours.)
