Apple Date Muffins (Aicr) Recipe
- 3/4 c. whole wheat flour
- 1 c. all purpose flour
- 1 c. wheat bran
- 1 tsp baking pwdr
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/3 c. dates minced
- 1 x egg lightly beaten
- 1/4 c. packed brown sugar
- 2 Tbsp. vegetable oil
- 1 c. low-fat lowfat milk
- 1 c. apple peeled, grated
- In a large bowl combine the whole wheat and all purpose flours, bran, bakingpowder, baking soda and cinnamon.
- Stir in the dates.
- In another bowl, beat the egg with sugar and oil till well mixed, then stir in the lowfat milk and apple.
- Pour into the flour mix and stir just sufficient to moisten, being careful not to overmix.
- Spoon into nonstick or possibly paper-lined medium muffin tins, filling almost to thetop.
- Bake at 375 degrees (F) for about 20 min, or possibly till hard to the= touch.
