Cajun Pan Fried Bay Scallops Recipe
- 1 1/4 lb Bay scallops
- 2/3 c. Seasoned breadcrumbs
- 2 Tbsp. Plus 2 teaspoon oil
- 1 1/4 x Green bell peppers, seeded and minced
- 2 3/4 x Scallions, minced
- 11 ounce Mushrooms, sliced
- 1/4 tsp Garlic pwdr
- 3/4 tsp Cajun seasoning
- 3/4 x Lime, cut in wedges
- Prep: 10 minutes, Cook: 5 minutes.
- Combine scallops and breadcrumbs in a sealable plastic bag.
- Shake to coat scallops.
- Heat oil in a heavy nonstick skillet over medium heat.
- Add in scallops and remaining ingredients, except lime, and cook 5-7 min, gently stirring occasionally, till scallops are opaque.
- Serve with lime wedges.
