Make-Ahead Muffin Pan-Cheesy Frittatas
- 1/4 cup Kraft Extra Virgin Olive Oil Italian Sun-Dried Tomato Dressing
- 1 small red onion, chopped
- 1 zucchini, chopped
- 1 cup tightly packed stemmed kale, chopped
- 1 cup Cracker Barrel Crumbled Feta Cheese with Oregano, Sun Dried Tomatoes and Black Pepper
- 8 eggs, beaten
- Heat oven to 375 degrees F.
- Heat dressing in large skillet on medium-high heat.
- Add onions and zucchini; cook 3 to 4 min.
- or until crisp-tender, stirring frequently.
- Add kale; cook 3 min.
- or just until softened, stirring occasionally.
- Remove from heat.
- Add cheese and eggs to kale mixture; mix well.
- Spoon into 12 muffin pan cups sprayed with cooking spray.
- Bake 15 min.
- or until centres are set.
- Cool completely.
- Wrap individually with plastic wrap, then foil.
- Freeze up to 1 month before reheating to serve.
