Grilled Salmon and Grapefruit Salad

  1. Coat grill with cooking spray, heat on high.
  2. Scrape vanilla seeds into a bowl.
  3. Add lemon and grapefruit juices, honey, salt, pepper, and 1/2 cup of oil.
  4. Toss arugula with 3/4 of the dressing.
  5. Grill salmon skin side down for 1 minute and turn.
  6. Season with salt and pepper and add remaining oil.
  7. Cook until fish is opaque, approximately 2 minutes.
  8. Serve salad on plate.
  9. Add salmon, grapfruit and remaining dressing.
