Chicken And Sausage Jambalya Recipe
- 1 fryer (approx. 3 lbs.)
- 1 1/2 lbs. smoked sausage
- 1 lg. onion minced
- 1 1/2 c. minced green onions
- 1 1/2 c. minced parsley
- 1 c. minced bell pepper
- 1 c. minced celery
- 1 c. uncooked rice
- Salt, red and black pepper
- 3 tbsp. Kitchen Bouquet
- Put fryer parts in pot deep sufficient to cover meat and onion with water and set to boil till fryer is almost done.
- Remove meat from pot and retain water.
- Debone.
- Put in fryer, sausage (cut in bite size) in medium roaster.
- Add in rest of ingredients including raw rice, add in seasonings to season well.
- Mix all this real well in roaster - add in fryer, onion and water.
- Bake in oven at 375 degrees.
- Stir occasionally and bake till rice is tender.
- May add in more water if needed.
- Serve warm with green salad.
