Poached Salmon with Herbed Sauce

  1. Heat a large frying pan of water over high heat.
  2. Bring just the boil and reduce heat to low, so the water is barely moving.
  3. Add the salmon fillets and sliced lemon, and simmer over heat for approximately 6-8 minutes or until just cooked through.
  4. Remove from the pan and keep warm.
  5. Bring evaporated milk, cream cheese spread, 1/4 cup of poaching liquid and herbs to the boil in a medium saucepan.
  6. Simmer until sauce thickens, stirring often.
  7. Serve over salmon with mashed potatoes and baby vegetables.
