Simple Chicken Corn Chowder
- 2 tablespoons butter
- 12 onion, chopped
- 3 stalks celery, chopped
- 4 potatoes, diced
- 2 tablespoons all-purpose flour
- 2 cups half-and-half
- 1 cup milk
- 2 cups cooked chicken meat, diced
- 16 ounces frozen whole kernel corn
- 1 teaspoon salt
- 12 teaspoon pepper
- 14 teaspoon chili pepper flakes (optional)
- 1 (15 ounce) can creamed corn
- Boil potatoes until soft.
- Peel and dice.
- Set aside.
- Melt butter in a soup pot or dutch oven over medium heat.
- Add onion and celery, cook for 3 minutes or until tender, stirring frequently.
- Add flour, cook 1 minute, stirring constantly.
- Stir in milk until your roux paste is formed.
- Slowly add in half & half, stirring constantly.
- Add remaining ingredients.
- Bring to a boil and cook for 5 minutes, then reduce heat and simmer until thickened.
- Enjoy!
