Simple Chicken Corn Chowder

  1. Boil potatoes until soft.
  2. Peel and dice.
  3. Set aside.
  4. Melt butter in a soup pot or dutch oven over medium heat.
  5. Add onion and celery, cook for 3 minutes or until tender, stirring frequently.
  6. Add flour, cook 1 minute, stirring constantly.
  7. Stir in milk until your roux paste is formed.
  8. Slowly add in half & half, stirring constantly.
  9. Add remaining ingredients.
  10. Bring to a boil and cook for 5 minutes, then reduce heat and simmer until thickened.
  11. Enjoy!
