Mashed (Not Potatoes) Squash

  1. Boil zucchini, water and seasonings covered over medium high heat for 6 minutes.
  2. Uncover and boil for 6 minutes more.
  3. Strain zucchini to remove moisture.
  4. Puree in a food processor or mash and add pesto to taste.
  5. Wonderful now or reheats well.
