Stuffed Peppers With Italian Cheeses
- 1 cup rice, uncooked
- 1 lb ground beef or 1 lb ground chuck or 1 lb ground turkey
- 1 dash salt or 1 dash pepper
- 24 ounces marinara sauce
- 4 medium bell peppers, Multi color
- 16 ounces Italian cheese
- In a large bowl combine 1 lb ground beef, parboild or long grain uncooked rice, seasoning to your taste, I prefer a cajun seasoning, worchestershire sauce, chopped onions and bell peppers.
- In a saute pan brown the beef with all ingredients and drain.
- Transfer mixture back to pan and add about 2 cups of water bring to a boil and simmer until rice is tender.
- While rice is cooking blanch your peppers in a pot of boiling water for about 5 minutes.
- Remove peppers from water and turn upside down onto paper towels to drain.
- Once rice is cooked poor about 2/3 cup of the sauce into mixture and add cheese and stir.
- In a baking pan sit peppers upright and fill to your desire.
- Pour remaining sauce on top of peppers and in the bottom of the pan and sprinkle top with chesse.
- cover with foil and bake 30minutes.
