Healthy Chicken & Egg Rice Bowl with Koya Tofu
- 1 block Koya tofu
- 1/4 Onion
- 1 Egg
- 100 ml Water
- 60 ml Mentsuyu
- 200 ml Hot cooked rice
- Soak the tofu in a generous amount of water.
- While you are doing that, cut the onion into 5 mm wide slices.
- Gently wring out the tofu and break it into bite sized pieces with your hands.
- Bring the water and mentsuyu to a simmer in a pot and then add in the onions and tofu.
- Once the onion has wilted, turn off the heat and add in the beaten egg.
- Once the egg is half cooked, it's done!
