Grilled Veggie Panini
- 1 Small Green Pepper
- 1 Small Onion
- 1 Small Sweet Potato
- 1 Small Yellow Squash
- 1 Small Zucchini
- 2 Tablespoons Olive Oil
- 1 teaspoon Italian Season
- 1/2 teaspoons Garlic Powder
- 1/2 teaspoons Oregano
- 1/2 teaspoons Rosemary
- Salt And Pepper
- 1 loaf Ciabatta Bread
- 4 Tablespoons Pesto
- Fresh Mozzarella
- Fresh Basil Leaves (optional)
- Of course you can use any variation of veggies and spices.
- These just happened to be what I had on hand.
- Slice all your veggies into bite size pieces.
- Toss in olive oil and spices until coated.
- Transfer to a baking sheet and bake for 20 minutes at 450 degrees F or until tender.
- About 3 minutes before they are done, begin prepping your bread.
- I like to toast both the outside and inside.
- I spray each side with a little olive oil spray and brown in a frying pan.
- After you have browned one side and the other is browning, add your pesto spread to one side and your mozzarella to the other.
- Add veggies and basil, if using.
- Enjoy!
