Grilled Veggie Panini

  1. Of course you can use any variation of veggies and spices.
  2. These just happened to be what I had on hand.
  3. Slice all your veggies into bite size pieces.
  4. Toss in olive oil and spices until coated.
  5. Transfer to a baking sheet and bake for 20 minutes at 450 degrees F or until tender.
  6. About 3 minutes before they are done, begin prepping your bread.
  7. I like to toast both the outside and inside.
  8. I spray each side with a little olive oil spray and brown in a frying pan.
  9. After you have browned one side and the other is browning, add your pesto spread to one side and your mozzarella to the other.
  10. Add veggies and basil, if using.
  11. Enjoy!
