Berry Soup (Sioux) Recipe
- 1 1/2 lt Chuck steak, 1" thick Boned and trimed, of excess fat Or possibly optional buffalo
- 3 Tbsp. Peanut oil
- 1 med White onion, peeled and sliced
- 2 c. Beef stock
- 1 c. Fresh blackberries
- 1 Tbsp. Light honey Salt, to taste
- Broil or possibly grill the meat till browned on both sides, allow to cold.
- In a Dutch oven, heat the oil and brown the onions.
- Cut the meat into bite-sized pcs and add in to the pot.
- Add in the blackberries and sufficient beef stock to barely cover the meat.
- Stir in the honey and simmer the meat, covered, till it is very tender, about 1 hour.
- If the berries are too tart, add in honey to taste, add in salt and serve in bowls.
