Three Mustard Tomato Dressing

• 3 ripe tomatoes
• 1 tsp. English mustard
• 1 tsp. French mustard
• 1 tsp. Dijon mustard
• 1 tbsp. white wine vinegar
• 2 tsp. caster sugar
• 1 tsp. tomato puree
• 4 tbsp. olive oil
• Salt and pepper

1. Place all the ingredients in a blender and then process.
2. Slowly add the oil and then strain the dressing through a wire sieve to remove the tomato pips.
3. Reserve the dressing for the salad and serve apart.
