Slow Cooker Chicken Enchilada Soup
- 2 pounds Boneless Chicken Breasts
- 2 cans (14 Oz. Size) Enchilada Sauce
- 1 can (14 1/2 Oz. Size) Diced Tomatoes With Green Chiles
- 1 can (15 Oz. Size) Black Beans, Drained And Rinsed
- 1 can (15 Oz. Size) Corn, Drained
- 2 whole Chipotles In Adobo, Chopped
- 1 Tablespoon Adobo Sauce (from The Chipotles In Adobo)
- Avocado, Pitted And Chopped
- Tortilla Chips, Broken Up
- Sour Cream
- Add all ingredients to slow cooker and cook on low for 6 hours.
- Garnish with avocado, chips and sour cream and enjoy!
