Minerva's Applesauce Cake
- 12 cup butter
- 2 large eggs
- 2 cups sugar
- 2 cups fresh applesauce
- 2 12 cups self-rising flour
- 1 12 teaspoons baking soda
- 1 teaspoon cinnamon
- 1 teaspoon allspice
- 1 teaspoon clove
- 1 cup pecans (chopped)
- 1 cup dark raisin
- 12 cup butter
- 1 cup brown sugar
- 1 teaspoon vanilla
- 14 cup milk
- Sift all dry ingredients, add eggs one at a time, beating well.
- Add butter and applesauce.
- Beat until well blended.
- Dredge nuts and raisins with flour, add them last.
- Pour batter into a tube pan which has been greased and lined with waxed paper.
- Bake at 350 degrees for one hour or until done.
- Glaze: Combine all ingredients and boil for one minute, pour over cake while hot.
- During Christmas I add 1 cup dried fruit and I garnish with red and green Marschino cherries.
