Jacked Up Potatoes

  1. Boil the diced potatoes in salted water until they fall apart when pierced with a fork.
  2. 30 minutes or so.
  3. Drain potatoes.
  4. Add milk, butter, and spices.
  5. Smash by hand or whip with a hand mixer.
  6. Fold in the green chilies & cheese.
  7. Top with a dusting I smoked paprika, if desired.
  8. I served this with my chipotle chicken recipe and spooned the sauce over the potatoes!
  9. Yummmm
