Jacked Up Potatoes
- 3 lb Red skin potatoes, cut up (skin left on)
- 4 tbsp Butter
- 1/2 cup Milk, more or less to desired consistency
- 1 tsp Garlic powder
- 1/2 tsp Salt & pepper
- 4 oz Can of diced green chilies
- 6 oz Pepper jack cheese, grated
- 1 each Smoked paprika, optional topping
- Boil the diced potatoes in salted water until they fall apart when pierced with a fork.
- 30 minutes or so.
- Drain potatoes.
- Add milk, butter, and spices.
- Smash by hand or whip with a hand mixer.
- Fold in the green chilies & cheese.
- Top with a dusting I smoked paprika, if desired.
- I served this with my chipotle chicken recipe and spooned the sauce over the potatoes!
