Margarita Sorbet With Lime Zest Confit

  1. For the Sorbet:.
  2. In a bowl, combine the lime juice, sugar, milk, tequila and triple sec.
  3. Mix well.
  4. Continue to mix in an ice cream maker Grate with a fork or put in a food processor for a few seconds.
  5. Freeze for 1 hour then mix with a fork.
  6. For the zest mix:.
  7. In a small saucepan, combine the lime zests, sugar and water.
  8. Simmer over low heat for 8 minutes until it reaches syrup stage.
  9. Rim 4 margarita glasses with sugar.
  10. Serve the sorbet in the glasses,garnished with the lime zest confit and slices of lime.
  11. 4 servings.
