Chicken Provencal Recipe

  1. Slice the onion into thin slices add olive oil to frying pan and saute the onions until translucent.
  2. Remove onions from pan and set aside.
  3. Add more olive oil and cook chicken until lightly brown on both sides (about 3-4 mins per side) - DOES NOT NEED TO BE COOKED THRU YET.
  4. Add back the onions to the pan, and add tomato sauce, wine and capers.
  5. Stir and then cover and let simmer on very low heat (about 20 minutes - until chicken is cooked through).
  6. Serve over rice
