Easy Chocolate Whoopie Pancakes
- 1 cup flour
- 2 Tbsp. sugar
- 1 tsp. CALUMET Baking Powder
- 1/2 tsp. baking soda
- 1 egg
- 1 cup buttermilk
- 2 Tbsp. vegetable oil
- 6 Tbsp. PHILADELPHIA Milk Chocolate Cream Cheese Spread
- Stir first 4 ingredients in small bowl with whisk until blended.
- Whisk egg, buttermilk and oil in medium bowl until blended.
- Stir in flour mixture just until blended.
- (Do not overmix.)
- Ladle batter onto hot griddle or into hot skillet sprayed with cooking spray, using about 2 Tbsp.
- batter for each pancake.
- Cook 2 to 3 min.
- or until bubbles form on tops, then turn to brown other sides.
- Transfer to parchment-covered rimmed baking sheet.
- Repeat with remaining batter to make a total of 24 pancakes.
- Spread 12 pancakes with cream cheese product; cover with remaining pancakes, pressing gently into cream cheese to secure.
