Lemony Coleslaw
- 1 (16-ounce) bag coleslaw mix
- 1/2 cup plus 2 tablespoons mayonnaise
- 1/2 cup golden raisins
- 1/2 cup thinly sliced scallions, white and light green parts
- 1 lemon, finely zested
- 1 teaspoon freshly squeezed lemon juice
- 1/2 teaspoon salt
- 3/4 teaspoon freshly ground black pepper
- In a large bowl, combine the coleslaw mix, mayonnaise, raisins, scallions, lemon zest, lemon juice, salt, and pepper.
- Toss well before serving.
