Healthy Peanut Butter Oatmeal Cookies

  1. Preheat oven to 350F
  2. Line baking sheet with parchment paper then set aside.
  3. Mix first 8 ingredients in a medium bowl until well blended.
  4. Mix last 3 (4 if using coconut) into the mixture.
  5. Drop 2 tablespoons worth onto the baking sheet keeping 1 to 1 1/2 inch apart.
  6. Bake for 20 to 30 minutes.
  7. Remove from oven and let cool slightly.
  8. Enjoy!
