Healthy Peanut Butter Oatmeal Cookies
- 2 Mashed Bananas
- 2/3 cup Unsweetened Apple Sauce
- 1/3 cup Reduced Fat Peanut Butter
- 1 tsp Vanilla Extract
- 1/2 tsp Salt
- 1/2 tsp Ground Cinnamon
- 1 dash Ground Cloves
- 1 dash Ground Nutmeg
- 1 1/2 cup Old Fashioned or Quick Oats Oatmeal
- 1/4 cup Semi - Sweet Chocolate Chips
- 1/4 cup Crushed Nuts (your choice)
- 1/4 cup Coconut Flakes (optional)
- Preheat oven to 350F
- Line baking sheet with parchment paper then set aside.
- Mix first 8 ingredients in a medium bowl until well blended.
- Mix last 3 (4 if using coconut) into the mixture.
- Drop 2 tablespoons worth onto the baking sheet keeping 1 to 1 1/2 inch apart.
- Bake for 20 to 30 minutes.
- Remove from oven and let cool slightly.
- Enjoy!
