Eggplant and Red Lentil Dahl

  1. Heat oil in a large frying pan and saute onion until tender.
  2. Add spices and cook for a further minute.
  3. Stir in the lentils and stock.
  4. Bring to boil then reduce heat to low and simmer, uncovered, for 10 minutes.
  5. Stir in beans and simmer a further 10 minutes until beans and lentils are tender.
  6. Stir in the Deli Spread and coriander and heat through.
  7. Serve dahl with rice, naan bread and sliced tomato.
