Eggplant and Red Lentil Dahl
- 1 tablespoon oil
- 1 onion, finely chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground turmeric
- 1 cup red lentils, rinsed
- 3 cups vegetable stock
- 200g green beans, trimmed and cut in half
- 1/3 cup JL KRAFT Eggplant & Garlic Deli Spread
- 1/3 cup finely chopped fresh coriander
- 2 tomatoes, sliced King Sooper's 1 lb For $0.99 thru 02/09
- steamed rice, to serve
- naan bread, to serve
- Heat oil in a large frying pan and saute onion until tender.
- Add spices and cook for a further minute.
- Stir in the lentils and stock.
- Bring to boil then reduce heat to low and simmer, uncovered, for 10 minutes.
- Stir in beans and simmer a further 10 minutes until beans and lentils are tender.
- Stir in the Deli Spread and coriander and heat through.
- Serve dahl with rice, naan bread and sliced tomato.
