Vegan Peanut Butter Chocolate Chip Cookies
- 3/4 cup Peanut butter
- 1/3 cup Earth balance natural butter spread
- 3/4 cup Sugar
- 1/2 cup Almond milk
- 1/2 tsp Vanilla
- 1/4 tsp Salt
- 1 tsp Baking powder
- 2 cup Flour
- 3/4 cup Chocolate chips
- 1/2 cup Sugar for rolling
- Preheat oven to 350F
- Cream peanut butter, earth balance, and sugar.
- Add vanilla and almond milk, mix well.
- Add salt and baking powder, mix well.
- Add flour, mix until just combined, fold in chocolate chips.
- Scoop dough with a small cookie scoop.
- Roll in sugar and place on parchment.
- Do not press down.
- Bake 10 - 12 minutes.
- Remove from oven and press them down with a fork.
