California Seafood Stew Recipe

  1. Coat Dutch oven with cooking spray; place over med-high heat till warm.
  2. Add in minced onion, sweet red pepper, and chopped garlic; saute/fry till tender.
  3. Add in tomato, tomato sauce, and Burgundy, stirring well to combine.
  4. Add in oregano and next 3 ingredients; stir well.
  5. Bring vegetable mix to a boil over medium heat; cover, reduce heat, and simmer 20 min.
  6. Add in scallops, shrimp, and clams to vegetable mix; bring to a boil.
  7. Reduce heat, and simmer 7-8 min or possibly till scallops and shrimp are done.
  8. Ladle into individual bowls.
