Michelles Shredded Pork Tacos
- 1 Tablespoon Canola Or Vegetable Oil For Searing
- 5 pounds Pork Shoulder Or Pork Butt
- 1/2 teaspoons Salt
- 1/4 teaspoons Pepper
- 1 teaspoon Granulated Garlic
- 1/2 teaspoons Onion Powder
- 1 teaspoon Cumin
- 1 Tablespoon Chili Powder
- 1/4 teaspoons Cayenne
- 1 teaspoon Southwest Seasoning Blend (I Use Pampered Chef )
- 1/2 cups Brown Sugar
- 12 ounces, fluid Can Of Dr. Pepper Or Any Soda Of Your Choice (root Beer Would Be Good Too)
- 16 White Corn Tortillas Or Soft Taco Size Flour Tortillas
- 2 cups Lettuce, Shredded
- 1 Avocado, Peeled, Pitted, And Diced
- 1/4 cups Parmesan Cheese, Freshly Grated
- 2 cups Cheddar Cheese, Shredded
- 1 cup Sour Cream
- 1 Lime, Sliced Into 8 Pieces
- If you have a crock pot like I do (which is a great investmentAll Clad brand) and you can use the insert right on the stovetop; use your insert for this step.
- If you dont have a crock pot insert that can be used on the stove then use a Dutch oven or large stock pot for this step.
- Heat oil on high in your crock pot insert (or Dutch oven).
- Sprinkle salt, pepper, and granulated garlic on the pork shoulder.
- Place the pork into the hot oil and sear it on all sides until they are golden brown.
- Preheat crock pot while the pork is searing.
- While the pork is searing, put all of the spices and brown sugar into a bowl and mix well.
- Once the pork is done searing pour half of the rub on the top side of the pork and rub it into the meat with a spoon.
- Then turn over the pork and do the same to the other side.
- If you used a Dutch oven for the above, now is time to put the pork and all of the liquid into your crock pot.
- Or if you did the above in your crock pot insert, place the insert into the crock pot.
- Next, pour the soda over the meat.
- Set the crock pot for 7 hours on high.
- However, youll want to turn the meat over after about 3 hours cooking.
- After the cooking has finished the meat will literally fall apart.
- Take a minute to remove any fat that remains.
- Then shred the pork with two forks or a fork and a set of tongs.
- Stir the shredded pork around in the sauce to coat all of the meat.
- Now the tacos: I like to make mine using white corn tortillas.
- I soften the tortillas by throwing them directly on the burner (I use a gas range) and heat them for about 15 30 seconds on each sidejust until pliable and not burnt.
- I place some pork, shredded lettuce and avocado in the tortilla.
- Then give it a sprinkle of cheese, a dollop of sour cream and a squeeze of lime juice.
- You may use any combination you like.

- *Please note the measurements for the ingredients to make the tacos are just an estimate in my opinion.
- You may use whatever you like to make the tacos and however much you want.
