Quinoa, Corn, And Broccoli
- 1 cup cooked white quinoa
- 4 oz broccoli, chopped
- 1 cup halved cherry tomatoes
- 1/2 cup canned or fresh corn
- 2 green onions, thinly sliced
- 2 handfuls fresh flat leaf parsley leaves
- 2 tsp cider vinegar
- 1 pinch of salt
- 1 pinch of pepper
- 2 tbsp extra virgin olive oil
- Assemble all salad ingredients.
- Mix all dressing ingredients and drizzle over salad.
- *You can also add meat like chicken, dried beef, etc.
