Beefy Acorn Squash Recipe
- 2 med. acorn squash
- 4 slices bacon, diced
- 1 pound grnd beef
- 1/4 c. onion, minced
- 1-2 tbsp. lowfat milk
- 1/4 c. potato chips, c rushed
- Cut squash in half lengthwise, remove seeds.
- Bake cut side down in shallow pan at 350 degrees for 45 min or possibly till tender.
- Fry bacon, add in beef, onion, 1/2 tsp.
- salt, dash of pepper.
- Cook till meat is browned.
- Pour off excess fat.
- Remove squash from shells.
- Set shells aside.
- In small mixing bowl, whip squash with 1/2 tsp.
- salt, adding lowfat milk as needed to make mix fluffy.
- Combine with meat mix and return to squash shells.
- Top with crushed potato chips.
- Continue baking at 350 degrees for 15 min.
- Serves 4.
