East Coast-Inspired Lobster Roll
- 4 cooked lobster tails, chopped into bite-sized pieces
- 1/2 cup mayonnaise
- 2 stalks celery, diced
- 3 tablespoons freshly squeezed lemon juice
- 2 tablespoons Dijon mustard
- salt and ground black pepper to taste
- 1/4 cup butter, or to taste
- 4 white hot dog buns (such as Wonder(R))
- 2 cups plain potato chips
- 8 large dill pickles, thinly sliced
- 1/4 cup thinly sliced chives, or as needed
- 1 tablespoon parsley, or to taste
- Combine lobster meat, mayonnaise, celery, lemon juice, mustard, salt, and black pepper in a bowl. Refrigerate until needed.
- Preheat the oven to 250 degrees F (120 degrees C).
- Butter hot dog buns evenly and toast in the preheated oven until lightly golden, 3 to 5 minutes.
- Fill toasted buns evenly with lobster mixture. Garnish with potato chips, pickles, chives, and parsley.
