Oven Baked Rosemary Chips

  1. Preheat oven to 350F (425F for crispier chips).
  2. Use a mandoline to slice potatoes very thin - about 1/8-inch thick.
  3. Spray several pans with nonstick olive oil spray.
  4. Arrange potatoes in a single layer on the pans.
  5. Spray lightly with nonstick olive oil spray.
  6. Bake 15 to 20 minutes till golden.
  7. They may not brown at the same rate so watch and remove when golden.
  8. Transfer to paper towels lined pan.
  9. Sprinkle while still hot with salt to taste and dried rosemary .
