Couscous with Zucchini
- 3 each zucchini small, sliced
- 1 each onions sliced
- 3 cups stock vegetable, or chicken stock
- 1 x mixed herbs or curry, garlic or Mrs. Dash
- 2 cups couscous
- Bring stock, onion & zucchini to a boil, simmer 15 or 20 minutes.
- Add couscous.
- Turn off heat.
- Let stand 5 or 10 minutes.
- Serves 2 as main dish or 4 to 6 as side dish.
- Notes: this is pretty basic, use your favorite veggies, mushrooms, carrots, green beans, anything.
- You can't go wrong.
- Quick and easy.
