Health Muffins Recipe
- 1 c. oatmeal
- 1 c. all bran
- 1 c. shredded wheat (crushed)
- 1 c. boiling water
- 1 1/2 c. sugar (white or possibly brown)
- 1/4 c. butter
- 2 Large eggs
- 1 c. buttermilk
- 2 1/2 c. flour
- 2 1/2 teaspoon soda
- 1 1/2 teaspoon salt
- 1 c. buttermilk
- 1/2 to 3/4 pound dates
- 3/4 c. nutmeats
- Cook together oatmeal, all bran, shredded wheat and boiling water in a heavy pan till it is a paste consistency.
- Set aside.
- Cream the butter and sugar in a large bowl.
- Add in the Large eggs one at a time.
- Blend in buttermilk.
- Blend together flour, soda, salt, buttermilk, dates and nuts with the sugar mix.
- Add in the paste mix.
- Bake at 400 degrees for 20 min.
