Honeydew Basil Nojitos
- 12 cup large fresh basil leaf, torn
- 12 cup lime juice
- 2 teaspoons granulated sugar
- 6 lbs honeydew melon, peeled, seeded and cubed
- lime wedge (optional)
- superfine sugar (optional)
- ice cube
- carbonated water (optional)
- honeydew balls (optional) or honeydew, spears (optional)
- In a large pitcher combine basil leaves, lime juice, and 2 tsp granulated sugar.
- Using a muddler or the back of a spoon, mash ingredients together well making sure that the sugar is dissolved.
- Set aside.
- Place about 1/4 of the melon cubes in a food processor or blender.
- Cover and process until smooth.
- Press puree through a fine mesh sieve.
- Discard solids.
- Repeat with remaining melon, working with 1/4 at a time.
- You should end up with 4 cups melon juice total.
- Add melon juice to pitcher.
- If desired, rub a lime wedge around the rim of eight glasses and dip rim in superfine sugar.
- Fill glasses with ice.
- Pour juice mixture into glasses.
- If desired, add a splash of carbonated water to each glass.
- If desire garnish with melon balls or spears.
- Serve immediately.
