Honeydew Basil Nojitos

  1. In a large pitcher combine basil leaves, lime juice, and 2 tsp granulated sugar.
  2. Using a muddler or the back of a spoon, mash ingredients together well making sure that the sugar is dissolved.
  3. Set aside.
  4. Place about 1/4 of the melon cubes in a food processor or blender.
  5. Cover and process until smooth.
  6. Press puree through a fine mesh sieve.
  7. Discard solids.
  8. Repeat with remaining melon, working with 1/4 at a time.
  9. You should end up with 4 cups melon juice total.
  10. Add melon juice to pitcher.
  11. If desired, rub a lime wedge around the rim of eight glasses and dip rim in superfine sugar.
  12. Fill glasses with ice.
  13. Pour juice mixture into glasses.
  14. If desired, add a splash of carbonated water to each glass.
  15. If desire garnish with melon balls or spears.
  16. Serve immediately.
