Pineapple Upside-Down Cake
- 1/4 c. butter
- 1/2 tsp. cinnamon
- 1 (8 oz.) can pineapple rings
- 1 can frozen cherries, thawed
- 2 eggs
- 1/2 c. sugar
- 1 c. buttermilk
- 1 1/2 c. flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- Preheat oven to 350u0b0.
- Combine 2 tablespoons melted butter and cinnamon.
- Mix well.
- Spread into 8-inch square baking dish.
- Top with pineapple rings.
- Place cherries in centers on rings.
- Beat eggs in medium bowl.
- Blend in remaining butter.
- Add fruit and buttermilk.
- Combine flour, baking powder, soda and salt. Gradually add buttermilk to mixture, beating until blended. Spread batter over fruit.
- Bake 30 minutes.
- Cool on rack and then serve.
