Potato wraps with cucumber relish and caramalised onions
- 4 medium potatoes
- 1 tbsp butter
- 1 1/2 tbsp grated cheese(any mild cheese which melts easily)
- 2 medium cucumbers
- 2 medium tomatoes(firm but ripe tomatoes)
- 1 tsp olive oil
- 1/2 tsp dried basil
- 1 salt and pepper
- 2 tsp butter
- 2 medium onions(sliced thinly)
- 4 rotis or flour tortillas
- 1 butter as needed
- For the potatoes: boil and peel the potatoes and remove in a bowl
- Add the ingredients for the potatoes to the hot potatoes and mix thoroughly till the butter and cheese is all melted and mixed properly with the potatoes.set aside
- For the cucumber:: peel the cucumber .cut it in half lengthwise and remove the seeds.
- Then dice them into small pieces
- Cut the tomatoes in half and remove the seeds and dice them into small pieces
- Heat a pan.add the olive oil and heat it.
- When the oil is hot add the cucumbers and tomatoes
- Add the salt,pepper and basil and cook for 2 min.the cucumbers should still be crunchy and the tomatoes should not get mushy.
- Remove from pan and set aside
- For the onions: heat a pan and add butter.
- Add the sliced onions and cook till the onions are nice and caramalised and soft.remove from pan and set aside
- Heat a skillet.
- Butter one side of the roti(tortilla).
- Keeping the buttered side down add 1 tablespoon of the mashed potatoes to the centre of the roti
- Add the relish on top of the potatoes and then add the onions.
- Then add some grated cheese.
- Fold one end over the filling and fold the other end over the first.
- Now place the rolled roti folded side down on the hot skillet.
- Cook that side till it gets a little golden.flip carefully and cook the same on the other side.
- Remove and serve hot!
