Potato wraps with cucumber relish and caramalised onions

  1. For the potatoes: boil and peel the potatoes and remove in a bowl
  2. Add the ingredients for the potatoes to the hot potatoes and mix thoroughly till the butter and cheese is all melted and mixed properly with the potatoes.set aside
  3. For the cucumber:: peel the cucumber .cut it in half lengthwise and remove the seeds.
  4. Then dice them into small pieces
  5. Cut the tomatoes in half and remove the seeds and dice them into small pieces
  6. Heat a pan.add the olive oil and heat it.
  7. When the oil is hot add the cucumbers and tomatoes
  8. Add the salt,pepper and basil and cook for 2 min.the cucumbers should still be crunchy and the tomatoes should not get mushy.
  9. Remove from pan and set aside
  10. For the onions: heat a pan and add butter.
  11. Add the sliced onions and cook till the onions are nice and caramalised and soft.remove from pan and set aside
  12. Heat a skillet.
  13. Butter one side of the roti(tortilla).
  14. Keeping the buttered side down add 1 tablespoon of the mashed potatoes to the centre of the roti
  15. Add the relish on top of the potatoes and then add the onions.
  16. Then add some grated cheese.
  17. Fold one end over the filling and fold the other end over the first.
  18. Now place the rolled roti folded side down on the hot skillet.
  19. Cook that side till it gets a little golden.flip carefully and cook the same on the other side.
  20. Remove and serve hot!
