Calypso Chicken Recipe
- 1 lrg oven bag
- 1 Tbsp. all-purpose flour
- 1 can pineapple chunks in juice - (15 ounce) undrained
- 1 pkt black bean-rice mix - (8 ounce)
- 1 can condensed chicken broth - (10 1/2 ounce)
- 1/2 c. water
- 1 Tbsp. minced fresh cilantro
- 4 x skinned bone-in chicken breasts
- Preheat oven to 350 degrees.
- Place oven bag in a 13- by 9-inch baking dish.
- Add in flour; twist end of oven bag, and shake.
- Add in pineapple and next 4 ingredients to oven bag; squeeze bag to blend ingredients.
- Arrange chicken in an even layer over rice mix.
- Close oven bag with nylon tie; cut 6 (1/2-inch) slits in top of bag.
- Bake at 350 degrees for 45 to 50 min.
- This recipe yields 4 servings.
