Low Carb Nested Eggs

  1. Spray 2 muffin tin wells with cooking spray (or oil lightly) and then line each well with deli ham (usually 1 or 2 slices per well).
  2. Crack an egg into each ham lined muffin well, season to taste with salt and pepper, top each with 1/2 ounce shredded cheese, and sprinkle with some sliced green onion.
  3. Place muffin tin in a pre-heated, 375 degree oven and bake for 15 minutes.
  4. Remove from the oven, let rest for a couple of minutes, loosen (if needed) from edges and then lift from muffin tin with a fork or silicone spatula.
  5. Enjoy!
