California Tamale Pie
- 3/4 lb. ground beef
- 2 1/2 c. milk
- 1 c. yellow cornmeal
- 2 eggs, beaten
- 1 (14 1/2 oz.) can tomatoes
- 1 (7 oz.) can corn
- 1 (2 1/4 oz.) can ripe olives
- 1 pkg. Lawry's spice for chili
- 1 tsp. garlic salt
- 1 tsp. chili powder
- 1 1/2 c. Cheddar cheese (6 oz.)
- 2 Tbsp. yellow cornmeal
- In a medium skillet, brown ground beef until crumbly.
- Drain fat.
- In medium bowl, combine milk, 1 cup of cornmeal and eggs; blend well.
- Add ground beef and remaining ingredients except cheese and 2 tablespoons of cornmeal.
- Stir to blend.
- Pour into lightly-greased 12 x 8 x 2-inch baking dish.
- Bake, uncovered, in a 350u0b0 oven for 35 to 40 minutes.
- Sprinkle with cheese and 2 tablespoons of cornmeal.
- Continue baking until cheese melts and cornmeal browns.
- Let stand 10 minutes before serving.
