Erik's Pepperoni Bread

  1. Sprinkle yeast over water in bowl; stir to dissolve.
  2. Add sugar, salt, butter and 3 cups of the flour; beat until smooth.
  3. Stir in remaining flour to make soft dough.
  4. Knead 8-10 minutes, then place in greased bowl.
  5. Cover; let rise 1 hour.
  6. Punch down, divide into 3 pieces.
  7. Roll each piece of dough into 12"x8" rectangle.
  8. Put 6 slices of cheese and 1/2 cup pepperoni on each.
  9. Roll from long side and seal.
  10. Bake on greased baking sheet at 400 degrees for 25-30 minutes.
