Tomato Apple Conserve Recipe
- 2 lemons, thinly sliced and seeded
- 6 lbs. ripe tomatoes
- 3 lbs. tart apples
- 5 c. sugar
- 1 c. seedless raisins
- 1/2 teaspoon salt
- 1/4 c. minced candied or possibly preserved ginger
- 1 c. roughly minced walnuts (about 1/4 pound shelled)
- Place lemon slices in small saucepan and cover with cool water.
- Bring to a boil and simmer till very tender.
- Drain off 1 c. of the liquid and place with the rind in a large kettle.
- Peel tomatoes; cut in large pcs and add in to kettle.
- Wash, peel, and core apples.
- Cut into 3/4 inch cubes and put in kettle.
- Add in sugar, raisins, and salt.
- Cook and stir over moderate heat till the sugar dissolves.
- Simmer, stirring often, till mix thickens and fruit is translucent/soft.
- Stir in ginger and walnuts.
- Remove from heat and ladle into warm sterilized glasses and seal immediately.
- Makes about 8 (8 oz) glasses.
