Italian(ish) Cheese-stuffed Turkey Breast
- 1 pound Turkey Breast Fillets
- 4 pieces (.75 Oz. Each) Laughing Cow Light Garlic & Herb Cheese Wedges
- 3/4 cups Italian Seasoned Bread Crumbs
- 4 dashes Jane's Krazy Mixed-up Salt
- 2 teaspoons Olive Oil
- 1.
- Preheat oven to 350 degrees.
- 2.
- Pound fillets with a meat mallet.
- 3.
- Sprinkle one side of the fillet with some Mixed-up Salt, just a little will be sufficient.
- Spread a cheese wedge onto each fillet (one wedge per fillet).
- Roll the fillet with the cheese.
- Secure with a toothpick, if necessary.

- Sprinkle Italian breadcrumbs onto a plate.
- 5.
- Roll each rolled fillet in the breadcrumbs for a light coating.
- 6.
- Place rolled fillets into a lightly greased (with Pam or other cooking spray) dish.
- 7.
- Lightly drizzle fillets with olive oil.
- If you want, you can sprinkle fillets with a few more breadcrumbs.
- 8.
- Place the dish into the oven and cook for 30-45 minutes, until the turkey is no longer pink.
- I cooked mine at 350 degrees for about 20 minutes, then turned it up to 400 for the last 10 minutes.
