Italian(ish) Cheese-stuffed Turkey Breast

  2. Preheat oven to 350 degrees.

  4. Pound fillets with a meat mallet.
  5. 3.
  6. Sprinkle one side of the fillet with some Mixed-up Salt, just a little will be sufficient.
  7. Spread a cheese wedge onto each fillet (one wedge per fillet).
  8. Roll the fillet with the cheese.
  9. Secure with a toothpick, if necessary.

  11. Sprinkle Italian breadcrumbs onto a plate.
  12. 5.
  13. Roll each rolled fillet in the breadcrumbs for a light coating.
  14. 6.
  15. Place rolled fillets into a lightly greased (with Pam or other cooking spray) dish.
  16. 7.
  17. Lightly drizzle fillets with olive oil.
  18. If you want, you can sprinkle fillets with a few more breadcrumbs.
  19. 8.
  20. Place the dish into the oven and cook for 30-45 minutes, until the turkey is no longer pink.
  21. I cooked mine at 350 degrees for about 20 minutes, then turned it up to 400 for the last 10 minutes.
