Peanut Butter Soup Recipe

  1. Combine first 4 ingredients in a saucepan, cover and cook over low heat for 10 min.
  2. Add in bouillon cubes and 1 1/2 c. water.
  3. Cook uncovered till bouillon cubes have dissolved.
  4. Pour mix into an electric blender and add in peanut butter.
  5. Process till smooth.
  6. Return mix to saucepan.
  7. Combine cornstarch and remaining 1/2 c. of water; stirring till well blended.
  8. Stir slowly into soup.
  9. Bring to a boil.
  10. Reduce heat and cook 1 minute.
  11. Stir in half and half.
  12. Cook uncovered over low heat; stirring constantly till thoroughly heated.
  13. Garnish with strips of carrots or possibly minced peanuts.
