Oatmeal Cinnamon Bread

  1. Combine milk, oats, sugar, salt and oil in large bowl.
  2. Cool to lukewarm.
  3. Soften yeast in warm water.
  4. Add to oatmeal mix. Add 2 cups flour, beating well.
  5. (Best to use bread attachments on mixer.)
  6. Add remaining flour to make a stiff dough.
  7. Either use kneading forks on mixer or turn out on floured surface and knead until smooth.
  8. Put in greased bowl; cover and let rise in warm place until doubled in size (about 1 1/2 hours).
  9. Punch down and turn out on
  10. floured surface.
  11. Divide dough in half.
  12. Round out each half to 15 x 9-inch rectangle.
  13. Sprinkle sugar and cinnamon mixture over dough.
  14. Sprinkle with raisins and nuts.
  15. Roll up jelly roll fashion.
  16. Place in 2 (9 x 5 x 3-inch) loaf pans (Corning or heavy best).
  17. Let rise in warm place until dough fills pans.
  18. Bake at 375u0b0 for 45 minutes.
