Sausage, Potato & Cheese Enchiladas

  1. Cook sausage in large nonstick skillet on medium-high heat 5 min.
  2. ; drain.
  3. Add hash browns; cook 5 min.
  4. Cool 10 min.
  5. Heat oven to 350 degrees F. Add 1/2 cup cheese to hash brown mixture; mix lightly.
  6. Spoon down centers of tortillas; roll up.
  7. Place, seam sides down, in 10x6-inch baking dish sprayed with cooking spray.
  8. Whisk eggs, milk and flour until blended; pour over enchiladas.
  9. Cover.
  10. Bake 30 min.
  11. Sprinkle with remaining cheese; bake, uncovered, 10 min.
  12. or until melted.
  13. Sprinkle with onions.
