Mackerel Run Down

  1. To remove the salt from the mackerel soak in water overnight or boil in hot water for 30 minutes
  2. Drain water off the mackerel and cut into medium size pieces
  3. Combine milk and water in a frying pan and boil until it looks oily
  4. Add the mackerel and cover the pot.
  5. Cook for 10 - 12 minutes on medium heat.
  6. Add and stir the onions, garlic, escallion, tomatoes, scotch bonnet pepper, thyme and vinegar.
  7. Add the salt and pepper to taste
  8. Lower the heat and simmer for 10 minutes.
  9. Serve with green bananas, yam, roast breadfruit and dumplings.
