Greek Salad Dip
- 1 cup crumbled feta
- 12 cup heavy cream
- 12 cup grated English cucumber
- 12 cup finely chopped ripe tomatoes
- 1 tablespoon grated red onion
- 1 tablespoon minced kalamata olive
- In a bowl, mash feta and cream together until smooth.
- Fold in cucumber, tomato, red onion and olives.
- Cover and refrigerate overnight before serving.
- Variation: add 1/4 cup champagne or white wine vinegar to this to make a vinaigrette dressing.
